Check Out WAFO’s “Food As Medicine (Episode 2) – Potatoes & Onions”


The Warwick Area Farmworker Organization in partnership with Sunriver Health are proud to present a new show called “Food As Medicine”. In this series our chefs explore ways to make healthy dishes many of which are inspired by traditional Mexican food culture.

In our latest episode (Episode 2) hosts Kathy Brieger and Sherry Wykcoff discuss two great healthy recipes that use the nutritious ingredients potatoes and onions. The first recipe is a great way to make a grill or baked onion and potato foil packet that can be cooked in a stove or on a BBQ grill. Then we look at potato tacos, which is great way to make a vegetarian based taco using a corn tortilla and fresh vegetable ingredients. This is dish is popular in the Pueblo Mexico and many of the local migrant farm workers in the local communities served by the Warwick Area Farmworkers Organization (WAFO) list it as a favorite lunchtime meal. Kathy and Sherry both have educational backgrounds in nutrition. Join them as they walk you through these easy and delicious dishes.
